A month later I’d lost 15 lbs. My cholesterol and blood sugar levels were down. My sleep apnea was gone. I felt good. So I kept it up. Then I wrote a book about it.

    I’m definitely going to get your book, but I do have a question. Like you I am interested in being a vegan two thirds of the time. I eat my lightest meal at dinner, usually a salad, or some kind of veggie dish. Do you think eating vegan for brek and dinner, and non vegan for lunch works as well?

    I’m glad your program worked for you, and will be trying the black bean burgers in today’s times!

    Hi Mark:

    I am going to get past my guilt for not having sent you recipes 10 years ago and thank you for promoting this program. I have followed it for 3 years. It has helped me control allergies, asthma and high blood pressure. My office mates at LaGuardia Community College stand around with their tun sandwiches and envy my vegetable combinations.

    I also started Bittman’s vegan until 6 a couple of years ago. My total cholesterol dropped by 210 to 180, my triglycerides are great. I think it is great that this is being put into book form so more people can learn about it. It is really easy to do after a few weeks…at first you have to remember to eat that way, after a while it becomes habit.
