This Week’s Minimalist: Citrus-Almond Poundcake

A food processor makes this poundcake incredibly fast and easy; a citrus soak makes it unbeliebably moist and delicious.

Just made a grapefruit yogurt cake that used a citrus soak as well. Makes it so moist. Can’t wait to try this:)

I love pound cake, can’t wait to try this one out!Another way to keep bundts from sticking (picked this up from a delicious Moosewood apple cake recipe) is to butter or oil the pan, then coat liberally with sesame or flax seeds. Works like a charm (good for the bottom of pizzas, too) and adds an interesting new dimension of flavor and texture. I’ve thought about using crushed nuts, too, but haven’t tried it yet…–Nat
