Here’s an alternative recipe for real English scones. I find them similar to scones you’ll find at Tea and Sympathy. 2 c flour (sifted), 1 T baking powder, 2 T. sugar, 1 t. salt, 1 1/3 c. heavy cream. Sift dry ingredients. Add cream — mix gently (very important). Pat to 2 " thickness. Bake at 375 for 12 min.
Mr Bittman,I follow you, make recipes from all over the world you have shared. I get it re: simple and clean and clear, but baking ? I have watched this video trying to see how much of everything is in it, makes me laugh. Ok I am going to try now but isn’t it chemistry thus exacting?
